Most Paprika is mild and slightly sweet in flavor with a pleasant, fragrant aroma. Paprika is traditionally used for color as well as a sweet capsicum flavor. A colorful garnish, paprika can be sprinkled on fish, meats, canapés, eggs, soups, sauces, and potatoes. Used in generous quantities, it is the main ingredient in such dishes as Hungarian goulash, and chicken or veal paprikash. Paprika is handy for micro-waved food as it gives a nice broiled or baked appearance to meats. Use this spice at the end of cooking and generously as it has a short shelf life. Discard if it turns brown.
