Vegetables - Roasted Potatoes

Serves 4.


Ingredients

5 Tablespoons Dijon mustard
5 Tablespoons olive oil
1 Tablespoon minced garlic
1 teaspoon Italian seasoning
3 Tablespoons white Wine
6 medium red potatoes, cut into 1 inch cubes

Directions

Mix all ingredients except potatoes. Place potatoes in a lightly buttered baking pan. Coat with mustard mixture to cover. Bake at 425 degrees for 45 minutes or until potatoes are fork-tender, stirring occasionally.
