Seafood - Scandinavian Salmon Souffle
Serves 1. Scale up for number of guests.
Ingredients
1 slice Wholewheat bread
1/4 cup Drained, flaked canned - salmon
1 Egg, beaten
1/2 cup Evaporated skim milk
1 Tablespoon Chopped onion
1 Tablespoon Chopped celery
1 Tablespoon Chopped parsley
1 teaspoon Lime juice
1/4 teaspoon dried dill weed
pinch of pepper
1/4 teaspoon Aromatic Bitters
Directions
Preheat oven to 350 degrees. Coat small souffle dish with non-stick spray. In bowl, break bread into small pieces. Mix in remaining ingredients. Pour mixture into prepared souffle dish. Bake 35 minutes or until knife inserted in center comes out clean.
