Roland Nonpareille Capers are the smaller of the commercially grown capers, measuring 3-7 mm in diameter, and are also the most popular size. They are green/gray in color. A caper is the flower bud (an unopened flower) of a bush native to the Mediterranean region. It is cured in brine and packed in vinegar. Use right out of the jar, for both hot and cold dishes. Greek, Spanish and Italian cuisine use capers in a wide variety of recipes.
